Watermelon and Tomato Salad

Yields: 4 servings  

Preparation Time: 20 mins



2 tbsp white balsamic vinegar

1 tbsp fresh basil, chopped

1 quart fresh watermelon, cut into 1-inch cubes

1/2 tsp seasoned salt

1/2 tsp black ground pepper

2 each fresh tomatoes

1 tbsp olive/canola oil 90/10 blend



Combine vinegar, oil and basil in a bowl, and mix well. Add watermelon to the vinegar mixture and gently toss to coat. Slice the tomatoes into 6-slices each and place on bottom of serving dish. Place watermelon mixture on top and season with salt and pepper. 

Portion Size: 3 slices of tomato and 1 cup watermelon mixture
